Courtney Roulston shares how to make a Mother’s Day fest for just $35

And Courtney Roulston stopped by the Sunrise kitchen on Saturday, sharing how to make a Mother’s Day feast for just $35.

The beloved TV personality made a menu that included roast pork, roasted vegetables and chocolate lava cake for dessert.

The roast pork recipe is below:

CRISPY ROASTED PORK KNOCK

Servings: 4-6

Recipe by Courtney Roulston.

Preparation time: 10 minutes plus drying time

Cooking time: 1.5 hours

ingredients

1.6 kg roast pork leg

Sea salt to taste

2 tablespoons of olive oil

Method

Stage 1: Remove the pork from the package and pat dry with kitchen paper. Use a sharp knife to cut the pork skin into 5mm strips, being careful not to cut into the meat.

Arrange the pork in a pan and sprinkle with salt.

Place in the bottom of the fridge uncovered overnight to dry out the skin.

Step 2: Heat the oven to 220C. Wipe the skin of the pork to remove the salt and water that has collected on the skin.

Rub the pork with the oil and sprinkle with salt.

Bake for 35-40 minutes, or until the skin starts to crack.

Reduce the oven to 180 degrees and bake for another 50-60 minutes, or until the crust is golden and the pork is cooked through.

Step 3: Let the pork rest uncovered in a warm place for 15 minutes before slicing and serving.
